ASSEMBLY INSTRUCTIONS
for the wood-burning oven for pizzerias including metal lining


TYPE 25



Positioning the frame
The frame is the supporting structure of the whole oven. The feet and the panels are fixed on to it.



Position the frame in the room where the oven will be monted.

Lift the frame and rest it on the four feet.

Positioning the panels



Position the firebricks (light bricks with a terracotta colour) leaving the space for mounting the last panel. Stagger the firebricks (like in brick walls)



Lay the headpiece on the firebricks, lay the two side pieces of the hood. They must project forward by about 3 cm.



Position the hood’s arch, position the front panel inserting it in the appropriate slot.

Rest the oven back on the headpiece and prop it up with a wooden board to avoid it from falling. Make sure that the joints of the various elements fit together using levers, a rubber headed mallet, shimming any possible differences of levels with the small metal plates.



Position the right back element on the oven base. Continue the assembling with the left shoulder. Subsequently position the left back element. The order in which you should position these elements depends on the part you can have access for positioning them. This order can be inverted according to your needs.

Installing floor



Prepare an insulating plaster to apply between the supporting base of the oven and the refractory floor.



Position the refractory floor, starting with the front part of the oven and following the numbers marked on the said floor. Using a rubber headed mallet, lay the refractory slab floor. Place the other slabs, avoiding any differences of level and gaps between one slab and another.

Plastering of the refractory floor



Utilize the mixture supplied (in small plastic container) to plaster the floor.

Position the dome



Attach the dome to a suitable sling and lower it until it is over the oven.



Start the plastering of the oven using the materials supplied. The plaster is found in the large white to which you only have to add water

Mounting side panel



Complete the mounting of the metal lining by positioning the missing panel. Screw and tighten all the connecting screws between the various panel



Mount the template.
Insert it in the appropriate holes and screw the four side screws.
Now you are ready to insulate the oven.

INSULATION OF THE OVEN



Place the panels of rock



Once the panels are positioned you are ready to plaster the insulating material.
Start to empty the plaster obtained over the oven until you have a layer of about 15 cm. covering the whole of the oven’s vault.



Place the rock wool panels on top of the insulating plaster.



Level the insulating material until it completely covers the rock wool.
At this point the insulating is completed.

RULES FOR THE FIRST LIGHTING

ATTENTION: Do not use bundles of wood or small pieces of wood that cause high flames for the first lighting but use, if possible, small wooden logs with a low combustion and make sure that when the wood burns that the flame does not touch the oven’s vault.
The first lighting is a very important phase on which the good performance of the oven and its durability depend.

FOR THE FIRST LIGHTING YOU MUST NOT USE paper, cardboard, bundles of twigs that would cause a rapid combustion.

IMPORTANT WARNING FOR THE FIRS LIGHTING For the first lighting to dry the insulation and the entire oven, the utilization of heavy wood, small logs or the introducing of burning charcoal is obligatory and you must make sure that the wood burns slowly and progressively without excessive bursts of flame.
In these cases the flame produced by the combustion must not directly reach the dome of the oven because a sudden heat change would be caused that could damage it.

WE RECOMMEND THEREFORE THAT FOR THE FIRST LIGHTING: MODERATE THE MEASURE OF HEAT.
The next day you may gradually increase the measure of heat in a matter of hours until the oven is completely white and ready for cooking. These operations must be carried out consecutively and gradually from one day to the next without allowing the oven to cool. It is extremely important that you respect and follow these rules in order to avoid any possible problems that could arise during the first lighting.
The appearance of small marks inside the oven will not compromise a good performance as they are a normal sign of the settling and dilatation of the refractory material, which will cease to exist in time.
After the first lighting, once the oven has reached the temperature in the following lightings you will be able to use any type of wood without taking any further precautions.
For a good functioning of your oven never plaster the oven door.

ADVISE:
Light the wood separately (in the hearth, brazier, grill or in the open air) then introduce the wood together with the burning charcoal inside the oven until it becomes white and the external thermometer reaches around 120°. This operation can last 1 to 2 days. The firm declines any responsibility for damages caused by the incorrect carrying out of these rules.
